Make Sev Barfi In Six Easy Steps

Sev Barfi is a delicious Indian sweet made primarily from besan (gram flour) and sugar, with the addition of khoya (mawa) to enrich its texture and flavour. It is a popular dessert, particularly in Gujarat and Maharashtra, often prepared during festivals and special occasions. 

Ingredients

1 cup fine besan (gram flour) 1 cup sugar 1 cup water 1/2 cup ghee (clarified butter) 1 cup khoya (mawa), crumbled 1/4 teaspoon cardamom powder A pinch of saffron strands (optional) 1/4 cup chopped nuts (almonds, pistachios, or cashews) for garnish

Step 1

In a heavy-bottomed pan, heat 2 tablespoons of ghee. Add the besan and roast it, stirring continuously to prevent burning. This should take about 5-7 minutes. 

Step 2

In another pan, combine the sugar and water. Heat the mixture, until the sugar dissolves completely. 

Step 3

Add cardamom powder and saffron strands to the sugar syrup. Add the roasted besan to the sugar syrup, stirring continuously to ensure there are no lumps. Add the remaining ghee gradually.

Step 4

Add the crumbled khoya to the mixture and continue to cook. The mixture should thicken in 10-15 minutes.

Step 5

Grease a tray or a square pan with a little ghee. Pour the cooked mixture into the prepared tray and spread it evenly using a spatula. Sprinkle the chopped nuts.

Step 6

 Allow the sev barfi to cool at room temperature or refrigerate until it sets completely.
