Sabakki or sabudana is a versatile but nutritious ingredient that can be used to prepare a variety of snacks, savouries, and sweets at home. Tapioca pearls can be used to make South Indian delight idli. Sago idli can be a healthy addition to your meals.
2 cups curd ½ cup sabudana Salt to taste 14-16 cashews 1 cup rava ¼ teaspoon baking soda Water and oil as required
In a large bowl, take rinsed tapioca pearls and mix them with rava and curd.
Add more water to maintain the consistency and mix with some baking soda. Avoid breaking sabudana.
Brush idli moulds with oil, add the batter, and place a cashew in each mould.
Allow the idlis to steam in the cooker for 10-15 minutes or until a toothpick comes clean.
Serve delicious idlis with your favourite chutneys. You can also fry them with onions, coconut, and dry red and green chillies.
