Loaded with flavours and delicious texture, jackfruit biryani can be called the best biryani ever made. It can even make non-veg lovers drool. With the irresistible frills and meat-like texture, jackfruit biryani is one of the best vegan biryani recipes that you must try for your next meal.
2 cups soaked basmati rice 1 cup raw jackfruit, diced 1 large onion, thinly sliced 2 tomatoes, chopped 1/2 cup plain yogurt 2 tablespoons ginger-garlic paste 2-3 green chilies, slit lengthwise 1 teaspoon cumin seeds 4-5 cloves 4-5 green cardamom pods 1 cinnamon stick 1 bay leaf 1/2 teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon garam masala Salt to taste Fresh coriander leaves for garnish
Saute cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf in oil then add onions and green chilies.
After the onion turns golden, add ginger-garlic paste and cook for a minute. Then add chopped tomatoes and cook till it turns mushy.
Add turmeric powder, red chilli powder, garam masala and mix well for a couple minutes then throw in chopped jackfruit. Saute for 3 - 4 minutes
In a separate bowl, boil water and add soaked rice. Cook until it's 70%-80% done then drain in and keep aside.
Include yoghurt in the jackfruit mixture, mix well and cook for a few minutes until the jackfruit is tender and curry thickness.
Layer the jackfruit curry with cooked rice and spread evenly. Cover the pan with a tight lid and cook on low heat for 15-20 minutes.
Once cooked and fluffy, garnish it with fresh coriander leaves and serve with raita or salad.
