Bring the taste of Rajasthan into your kitchen with Mawa Kachori, a sweet and crispy delicacy filled with rich khoya and aromatic spices.
All-purpose flour: 1 cup Desi ghee: 3 tbsp + for deep frying Cardamom powder: 1/2 tsp Khoya (Mawa): 1/2 cup Black cardamom seeds: 3 Nutmeg powder: 1/4 tsp Chopped almonds: 2 tbsp Chopped pistachios: 1 tbsp Dried rose petals: For garnishing Water: For kneading
Sugar: 1 cup Water: 1/2 cup Kesar: Pinch Water: 2 tsp Cardamom powder: 1/2 tsp
Mix maida with ghee, then add water gradually to knead a soft dough. Roast khoya, ghee, black cardamom seeds, and nutmeg powder until sandy. Add powdered sugar off heat.
Stuff the prepared mawa mixture into dough balls and seal them well. Deep fry the kachoris in hot ghee until golden brown and crispy.
Dissolve sugar in water, add soaked kesar and cardamom powder, and cook until sticky. Pour sugar syrup into the centre of each kachori, garnish with nuts and rose petals, and enjoy your homemade Rajasthani Mawa Kachori!
