Kachoris in Rajasthan can be declared state food because of their popularity. The two famous kinds - dal kachori and pyaz kachori - are perfect for breakfast and evening snacks paired with tea. Here is how to make this regional delight at home with moong dal.
½ cup moong dal 1 tsp cumin and crushed fennel 1 tsp chilli powder & garam masala Salt to taste A pinch of hing 2.5 cups maida ¼ tsp turmeric & ginger powder 3 tbsp ghee 1 tsp coriander powder 1 tsp mango powder ½ cup besan Water as required Oil for frying
In a large bowl, mix maida, salt, and ghee. Use water as required to knead a soft dough.
Keep the dough aside for 30 minutes for the gluten to develop.
Take soaked moong dal and grind it into a coarse paste. Meanwhile, roast spices in a tablespoon of ghee until fragrant.
Add besan to the mix and let it roast. In the end, add moong dal paste and cook it at low flame for the water to evaporate.
Take small spheres of the kneaded dough and stuff them with moong dal and besan mixture. Roll into circular kachori.
Drop kachoris in hot oil and deep-fry them until crispy.
