If you need a quick and healthy fix as a snack or a mid-meal munchie, you can make quinoa salad. Without sparing much time, you can prepare a healthy bowl of millet salad with this recipe.

Ingredients

1 cup quinoa, rinsed 2 cups water 1 cup cucumber, diced 1/2 red onion, thinly sliced 1/2 cup cherry tomatoes, halved 1/4 cup chopped fresh mint 1/4 cup chopped fresh cilantro 1/4 cup olive oil 2 tablespoons lemon juice 1 tablespoon vinegar 1/2 teaspoon honey Salt and pepper to taste

Step 1

Mix quinoa with water and salt and boil the mixture. Let it simmer till water is absorbed.

Combine cooked quinoa, chopped cucumber, onion, tomatoes, mint, and cilantro.
