The salty ocean brine comes to your plate in the form of this deliciously savoury pasta recipe, flavoured with garlic and white wine. Swap the clams for any kind of shellfish you might prefer, to throw together a lunch that feels special and indulgent.
1 dozen clams ½ packet spaghetti 7-8 cloves garlic, minced 3 tablespoons butter 1 teaspoon red chilli flakes ¼ cup white wine 2 tablespoons chopped parsley Salt and pepper, to taste
Heat the butter in a large skillet, while you put a huge pot of water to boil for the pasta.
Cook the garlic and red chilli flakes in the butter until aromatic, before deglazing the pan with white wine.
Rinse the clams to get rid of any dirt and toss them into the pan with the white wine and garlic butter.
Cover with a lid and cook for 2-3 minutes, until the shells open up once cooked through.
Boil the spaghetti and add it to the clam sauce, along with some pasta water and seasonings.
Toss thoroughly to combine before garnishing with chopped parsley and serving warm.
