Malai kofta is a traditional Punjabi dish that features deep-fried paneer balls (koftas) simmered in a rich and creamy gravy featuring cashew nuts. Follow this recipe to make a sumptuous dinner.
For The Kofta: 250 grams paneer 2 potatoes 1/4 cup coriander leaves 1/2 tsp green chilli 1/2 tsp garam masala 1/4 tsp salt 2 tbsp corn flour Oil for frying
For Gravy: 2 tbsp ghee 2 bay leaves 4 green cardamoms 1/4 tsp black peppercorns 1 tsp cumin seeds 2 onions 2 tomatoes 1/2 cup cashews 1 tbsp coriander powder 1 tbsp red chilli powder 1/2 tsp turmeric powder 1 inch ginger 4 cloves garlic 1.5 cups water Salt to taste Fresh coriander leaves for garnish
Make a mixture for kofta by combining grated paneer, mashed potatoes, chopped coriander leaves, green chillies, garam masala, corn flour, and salt.
Heat some oil and deep-fry small portions of the mixture shaped into balls. Set aside.
Prepare the gravy by sauteeing bay leaves, cardamoms, peppercorns, and cumin seeds. Add onions and tomatoes.
Make a paste by blending cashew nuts. Mix in the paste with coriander powder, red chilli powder, turmeric powder, ginger, and garlic.
Add some water and let the gravy simmer. Season with salt and add koftas.
When the koftas absorb the flavours, serve hot.
