Aloo Gobhi is a popular North Indian vegetarian dish made with potatoes and cauliflower, cooked with onions, tomatoes, and aromatic spices. This flavourful dish is a staple in Indian cuisine, enjoyed with roti, naan, or rice. White every home has a unique way to make this dish, here’s a simple recipe to try.
1 cauliflower 2 potatoes 2 tbsp mustard oil 1 tsp cumin seeds 1 onion 2 tomatoes 2 green chillies 1 tbsp ginger-garlic paste 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp garam masala Fresh coriander leaves Salt
Cut the cauliflower into medium-sized florets and dice the potatoes into similar-sized pieces.
Heat oil in kadai over medium heat. Add cumin seeds. Add the finely chopped onions and sauté. Add the ginger-garlic paste and green chilies.
Add the chopped tomatoes and cook until they become soft. Add turmeric powder, red chilli powder, and coriander powder.
Add the diced potatoes and cauliflower florets. Stir to coat the vegetables with the spices and salt.
Cover the pan with a lid and let the vegetables cook on low heat for approximately 15-20 minutes.
Once the vegetables are cooked, add garam masala and stir gently. Garnish with fresh coriander leaves.
