Whether you are a fan of chole bhature or pindi chole, you only need this Punjabi chole masala to prepare restaurant-style dishes at home. This spice mixture is easy to make and amplifies the flavours of the recipe.
½ tsp ajwain 3 tbsp cumin & coriander seeds 3 tsp peppercorn 1 tsp mango and garlic powder 1 tsp fenugreek seeds 12 dried red chillies 2 tbsp dried pomegranate seeds 4 inches cinnamon stick 2 tbsp black salt ½ tsp ginger powder 2 black cardamoms 6-8 cloves
Heat a pan and dry roast whole spices first. Keep them aside to cool off.
In the same pan, dry roast seeds so that they release the aroma.
Add all the ingredients in a blender once they cool off.
When you have a coarse powder, add salt to taste, amchur powder, ginger powder, and garlic powder.
Blend again into a fine powdered mixture.
Store this masala in an airtight jar.
