Make Pav Bhaji Masala At Home In 6 Easy Steps

Do you miss the spicy and tangy flavour of pav bhaji when you make it at home? It could be because you don’t have the customised masala at home. Street food vendors use a special spice mix that makes their bhaji taste piquant. Similar to pav bhaji, you can also make its flavourful mixture at home. 

Ingredients

3 star anise 5-6 dry red chillies 1-2 bay leaves 3-inch cinnamon 2 black cardamoms 3 tablespoons coriander seeds 2.5 tablespoons cumin seeds 1-2 teaspoons black pepper ½ teaspoon hing (asafoetida) 10 cloves 1 tablespoon fennel seeds 4 green cardamoms 1 tablespoon amchur powder

Step 1

Start by heating a pan and roasting star anise in it. Keep it aside.

Step 2

Add black cardamom, cinnamon, bay leaves, coriander seeds, and red chillies to the pan. Add these to the plate.

Step 3

Dry roast cumin seeds, black pepper, fennel seeds, cloves, and cardamom separately because they take less time to roast. 

Step 4

Add all the spices into a blender and fold in amchur powder, Kashmiri red chilli powder, and salt to taste.

Step 5

Grind the spices into a smooth powder with a few coarse granules. 

Step 6

Store the mixture in an airtight container and use it generously while cooking pav bhaji at home.
