A traditional Japanese ‘rice ball’ which has a triangular or oval shape and is filled with cooked shrimp or salmon, the onigiri is a delicious snack to enjoy on-the-go. Pair it with a light salad to make a substantial meal, on days when stepping out for sushi might feel like a task.
2 cups sushi rice, rinsed 2.5 cups water ¼ cup rice vinegar 3-4 tablespoons soy sauce 2 tablespoons sugar 1 teaspoon salt ½ cup cooked salmon/shrimp Nori sheets, cut into strips
Soak the sushi rice for 30 minutes before cooking as per packet instructions.
Once slightly cooled, add in the rice vinegar, soy sauce and sugar.
Season the cooked seafood lightly with salt while you divide the cooled rice into portions.
Spread a portion of the rice on to a nori sheet and place some salmon or shrimp in the centre.
Use another portion of rice to top up the filling and shape into a desired form of choice.
Refrigerate until ready to eat and enjoy with some soy sauce for dipping.
