Make Nutritious Maharashtrian Usal To Add Flavour To Your Meals

Maharashtrian Usal is a wholesome and comforting dish made with sprouted lentils or beans. The nutritious Maharashtrian staple can be enjoyed as is or paired with roti, pav, or bhakri.

Ingredients

1 cup mixed sprouts (moong, chana, and matki) 1 onion 2-3 green chillies 1-inch ginger 3-4 cloves garlic 1 tsp cumin seeds 1 tsp mustard seeds 1 dried red chilli A pinch of hing 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1/2 tsp garam masala 1 tbsp oil Coriander leaves for garnish Salt to taste

Step 1

Rinse and soak the mixed sprouts overnight. Once sprouted, rinse again.

Step 2

Heat some oil and saute cumin seeds, mustard seeds, and dried red chilli.

Step 3

Add chopped onions, green chillies, ginger, and garlic and saute till golden brown.

Step 4

Mix in turmeric powder, red chilli powder, coriander powder, and garam masala.

Step 5

Add the sprouts and coat them well with the masala. Pour some water and boil.

Step 6

Simmer till you get a thick gravy, garnish with coriander leaves and enjoy.
