If you are a vegetarian who would love to try kebabs, beetroot kebabs are a must-try for their earthy notes and subtle sweet flavour. If you top it with some sesame seeds, you can add a crunch and make the dish healthier.
1 teaspoon black pepper powder 250 gm beetroot 1 teaspoon red chilli powder 250 gm boiled potatoes/ sweet potatoes Salt to taste 2 tablespoons oil 1 tablespoon dry mango powder Breadcrumbs of 3-4 slices Oil for deep frying
Grate roasted beetroot, potatoes or sweet potatoes in a bowl. Combine them nicely so that you do not have big chunks of vegetables.
Add the mentioned spices to the mixture. Taste a little bit of the mix and adjust the salt and spiciness.
Add breadcrumbs to the bowl. It will ensure that the ingredients bind well and kebabs have a crunchy texture.
Rub oil in your palms and make small patties with the beetroot and potato mixture. Keep them aside in the refrigerator for 15-20 minutes.
In a pan, add some oil and shallow-fry the kebabs. Cook both sides until they are brown and crispy.
Top the kebabs with toasted sesame seeds and serve them hot with your favourite chutney.
