Paneer rezala is a rich and creamy Indian curry, perfect for special occasions or a delightful dinner. This is a Mughlai-inspired dish that combines soft paneer cubes with a fragrant, yoghurt-based sauce, enriched with aromatic spices and ground nuts. Take a look at the recipe here:
250 grams paneer, cut into cubes 1 cup plain yoghurt 2 tablespoons cashew nuts 2 tablespoons poppy seeds 1 large onion, finely chopped 1 tablespoon ginger-garlic paste 2-3 green chillies, slit 1 teaspoon garam masala 1 teaspoon white pepper powder 1 teaspoon sugar 2 tablespoons ghee 1 cup water Salt to taste Fresh coriander leaves for garnish
Soak cashew nuts and poppy seeds in warm water for 15 minutes. Blend into a smooth paste.
Heat ghee in a pan. Add finely chopped onions and sauté until golden brown. Stir in ginger-garlic paste and cook until aromatic.
Lower the heat and add yoghurt, stirring continuously to prevent curdling. Add the cashew-poppy seed paste, garam masala, white pepper, and sugar.
Add water to the mixture and bring to a gentle boil. Let it simmer for a few minutes until the sauce thickens.
Add paneer cubes and green chillies. Cook for another 5-7 minutes, ensuring the paneer absorbs the flavours. Garnish with fresh coriander leaves.
