Coconut cake is a timeless classic dessert that can give you a tropical vibe from the comfort of your home. Amping up with coconut frosting can even take this dessert to the next level. Why don’t you give this recipe a try?
Maida - 2 cups Powdered sugar - 4 cups Sweetened coconut - 2 cups Coconut milk - 1 cup Butter - 1/2 cup Eggs - 3 Baking powder - 2 teaspoons Vanilla extract - 2 teaspoons Salt - 1/2 teaspoon
Mix the dry ingredients like maida, 1 cup of sugar, baking powder, half of sweetened coconut, and salt together.
Blend the wet ingredients in a mixer till the mixture with butter, eggs, coconut milk, and 1 teaspoon of vanilla extract is uniform.
Gently add the dry ingredients and mix to get a smooth batter.
Pour the batter into a baking pan and bake it for about half an hour.
In the meantime, prepare the frosting by blending butter, sugar, coconut milk, and vanilla extract till it’s creamy.
After the cake is cooled down, decorate it with frosting and sprinkle the rest of the sweetened shredded coconut on top.
