If you like vadas, you must try making masala vada curry at home! The delicious South Indian dish features flavourful masala vadas (spiced lentil fritters) cooked in a robust, spicy gravy Here's a basic recipe for making masala vada curry at home

1 cup chana dal 1 medium-sized onion 2-3 green chilies 1 inch ginger, grated 2-3 cloves garlic, minced 1/4 cup chopped coriander 1/2 teaspoon fennel seeds 2 tablespoons oil 2 tomatoes, finely chopped 1/2 teaspoon turmeric 1 teaspoon red chili powder 1/2 teaspoon cumin powder Salt to taste

Soak chana dal in water for 2-3 hours. Drain the water and grind the dal coarsely without adding much water. Add chopped onions, green chilies, ginger, garlic, coriander leaves, fennel seeds, and salt to the dal

Heat oil in a pan for frying. Shape the mixture into small patties and deep-fry until they turn golden brown and crispy. Remove excess oil by placing them on a paper towel.

In a separate pan, heat 2 tablespoons of oil. Add finely chopped onions and sauté until they turn golden brown. Add ginger-garlic paste and sauté for a minute

Add chopped tomatoes and cook until they become soft Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook the masala for a few minutes.

Pour in water and place the fried masala vadas into the curry. Simmer for 5-7 minutes, so the vadas can absorb the flavours.

Garnish with chopped coriander leaves. Serve masala vada curry hot with rice, roti or appam
