Make Maharashtrian Style Dodka Bhaji Using This Easy Recipe

Maharashtrian Dodka Bhaji is a traditional vegetable dish from Maharashtra, India, featuring ridge gourd (dodka) as its primary ingredient. This simple yet flavorful dish is known for its minimalistic approach and wholesome taste. is often enjoyed as a side dish with bhakri or chapati alongside dal and rice.

Ingredients

2 ridge gourds (dodka) 1 onion 2-3 green chilies 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1/4 tsp turmeric powder 2 tbsp oil Freshly grated coconut Coriander leaves 

Step 1

Peel the ridge gourd if the skin is tough; otherwise, you can keep the skin on. Cut the ridge gourds into small cubes or slices.

Step 2

Heat oil in a pan. Add mustard seeds and cumin seeds. Then add chopped onions, green chilies and turmeric powder.

Step 3

Add the chopped dodka, cover the pan and cook. Ridge gourd releases water while cooking, so you may not need to add extra water. 

Step 4

Cook until the ridge gourd pieces are tender and cooked through. Garnish with freshly grated coconut and chopped coriander leaves. 

Step 5

Serve hot with chapati, bhakri, or steamed rice as a side dish.
