Thecha is among a few popular recipes of Maharashtrian condiments. Made with chillies, garlic, lemon juice, and peanuts, it is a perfect accompaniment to serve with stuffed or plain parathas. While mostly it is made with green chillies, you should try making a batch with red chillies following this recipe.

Ingredients

2 tbsp roasted peanuts 10 dry Kashmiri red chillies 3 tbsp oil 4-5 pandi chillies 1 tsp lemon juice 3 tbsp chopped garlic Salt to taste 1 tsp cumin seeds

Step 1

Take a jar and blend pandi chillies, Kashmiri red chillies, garlic, salt, lemon juice, and ½ a cup of water.

Step 2

The past should not be runny and must have a coarse texture.

Step 3

Heat oil in a pan and sprinkle a pinch of asafoetida. Pour the red chilli paste.

Step 4

Keep stirring thecha for at least 5-8 minutes so that the smell of raw ingredients fades away.

Step 5

Turn off the gas and allow the thecha to cool off.

Step 6

Store thecha in an airtight container and serve it with paratha or snacks.
