Make Low-Calorie Digestive Biscuits At Home

Not only can they be made at home within a few minutes but they can also be made without flour, sugar or any added sweeteners. Here's a recipe for an easy low-calorie digestive biscuit which you can eat all summer!

Ingredients

– 1 cup whole wheat flour – 1/2 cup oat flour – 1/4 cup coconut flour – 1/4 cup granulated stevia – 1/2 teaspoon baking powder – 1/4 teaspoon baking soda – Pinch of salt – 1/4 cup unsweetened applesauce (as a butter substitute) – 3-4 tablespoons cold water – 1 teaspoon vanilla extract

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, combine the whole wheat flour, oat flour, coconut flour, sweetener, baking powder, baking soda, and salt.

Step 2

 Add the unsweetened applesauce and vanilla extract to the dry ingredients. Mix until the mixture resembles coarse crumbs. Slowly add cold water, one tablespoon at a time, until the mixture comes together to form a dough. Be careful not to add too much water.

Step 3

On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Use a cookie cutter or a knife to cut the dough into biscuit shapes. You can make them round or use any other shape you prefer.

Step 4

Place the biscuits on the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until they are golden brown. Cool before serving.
