Are you craving dosa for your next meal but have not prepared the batter in advance? Worry not, because you can instantly make dosa using rava. You won’t even need maida (all-purpose flour) for this recipe, and a crispy dosa will be on your plate in no time.

3 cups water 1 cup semolina 1 cup curd 5-7 curry leaves 2 tablespoons freshly chopped coriander leaves 1 chopped green chilli 1 inch ginger finely chopped 1 teaspoon cumin powder 1 teaspoon cumin red chilli powder Salt to taste

Mix semolina with curd to form a thick paste with no lumps. Curd will ensure that the batter instantly ferments and you get the crispiest dosas on your plates.

Add water to the mix slowly. Make sure that the batter is runny and not thick in consistency. Add spices and other ingredients to the mix and keep it aside for 15-20 minutes.

Take an iron pan or a non-stick dosa pan and heat it on medium flame. Sprinkle some water to test how hot it is.

Take a ladle full of batter and spread it gently on the hot pan. Since the batter is runny, the dosa will have many gaps. You can fill them later or leave them as they are.

After a couple of minutes, add oil on the sides of the dosa and in between gaps. It will prevent the dosa from sticking and ensure easy removal.

Cook the dosa until it achieves a crispy texture and brown colour. Flip it to cook it for a couple of minutes on the other side and serve it hot with sambar and chutney.
