Moong Dal Halwa is a luscious dessert popular across North India, especially in winter. Made with moong lentils, ghee, milk, and sugar, this halwa is rich in flavour, and garnished with fragrant cardamom and crunchy nuts.
1 cup moong dal (split-husked yellow lentils) 9-10 tbsp ghee (clarified butter) 4 green cardamoms, powdered 10-12 pistachios or almonds, sliced 1 tbsp golden raisins 1 cup whole milk 2 cups water 1 to 1.25 cups sugar
Soak moong dal in water for 4-5 hours or overnight. Drain the water and grind the moong dal to a smooth paste.
Heat ghee in a pan. Add the moong dal paste and mix well.
Cook on medium heat, stirring until the mixture turns golden and releases ghee.
In another pan, heat milk, water, and sugar until it comes to a boil.
Slowly add the milk mixture to the moong dal, stirring continuously.
Cook until all liquid is absorbed and the ghee separates again. Add cardamom, nuts, and raisins.
Serve hot, garnished with sliced pistachios or almonds. Enjoy the warm, nutty flavours of this classic halwa.
