Siddu is one of the best local dishes you can savour on your trip to Himachal Pradesh. It is often consumed for breakfast, and you won’t find anything healthier than this. Here is a recipe for you.
For Dough 1 tsp instant yeast 2 cup whole wheat ½ tsp salt 1 tsp sugar ½ cup warm water 1 tbsp oil
For Filling 2-4 green chillies ¼ cup urad dal 2-4 garlic cloves 1 tsp turmeric powder 1-inch ginger 1 tsp cumin seeds 1 tsp cooking oil 1 tsp coriander powder 1 small onion 2 cups of water Salt to taste
Soak urad dal for 5-6 hours and blend it with ginger, garlic, green chillies, salt, and turmeric powder.
Heat oil in a pan and let cumin seeds splutter in it. Add some turmeric and saute chopped onions.
Pour the thick lentil paste and water. Cook it on low heat until it thickens. Garnish it with coriander leaves.
Using all the ingredients, knead the dough with lukewarm water. Let it sit for 10 minutes and knead it again. Keep it aside for a couple of hours.
Divide the dough into equal parts. Roll each part into a disc, and fill it with the spiced stuffing. Fold it in half.
Steam the desi calzone for at least 10-12 minutes. Cut it and serve it with the chutney of your choice.
