Ragi dosa is a healthy South Indian dish made from finger millet flour. It is a rich source of calcium and fibre. With a slightly earthy flavour, it is typically served with chutney or sambar, making it a wholesome meal.
1 cup ragi flour (finger millet flour) 1/2 cup rice flour 1/4 cup urad dal (split black gram) 1/4 cup water 1/2 tsp cumin seeds 1/4 cup onions 1/4 cup grated carrot 1 tbsp green chilies Oil Salt
Soak Urad Dal in water overnight. Drain the water and grind it to a smooth paste. Add a little water if needed.
In a bowl, combine the urad dal paste, ragi flour, rice flour, and salt. Mix well to form a smooth batter. Gradually add water to get a pourable consistency similar to regular dosa batter.
Cover the batter and let it ferment for 6-8 hours or overnight in a warm place. Once the batter has fermented, give it a gentle stir. Add cumin seeds, chopped onions, grated carrot, and green chillies.
Grease a non-stick pan or tawa ightly with oil. Pour a ladleful of batter onto the centre of the pan and spread it evenly in a circular motion to form a thin dosa.
Drizzle a little oil around the edges and cook until the dosa turns golden brown and crispy. Flip the dosa and cook for another minute or so on the other side.
Remove the dosa from the pan and serve hot with coconut chutney or sambar.
