Khichdi is a simple one-pot dish filled with the goodness of lentils and rich in fibre and nutrients. If you’re looking for a light dinner option after the weekend, try this Gujarati-style khichdi recipe.
1 cup moong dal 1 cup rice 3 tablespoons ghee or butter 1/4 teaspoon hing 1 tablespoon ginger 1/2 tablespoon garlic 1/2 teaspoon turmeric powder 2.5 cups water Salt to taste
Rinse and soak the moong dal and rice together for a few hours.
Heat some ghee and add turmeric powder, hing, salt, chopped ginger and garlic.
Transfer the masala to a pressure cooker, add the soaked dal and rice, and cook on high pressure for about ten minutes.
After the whistle, turn off the heat and let the cooker release pressure before you open the lid.
Garnish with chopped cilantro leaves and ghee, and enjoy.
