Make Goan-Style Crispy Mandeli Fry To Munch With Chilled Beer

Fried fish of any kind and bitingly cold beer are a match made in heaven. The golden anchovies get a crispy coating which make them almost like fishy French fries; perfect as an accompaniment to your giant mug of beer.

INGREDIENTS

18-20 golden anchovies (mandeli) 1 tablespoon red chilli powder 1 tablespoon turmeric powder 2 tablespoons semolina 1 tablespoon vinegar Salt to taste Oil for shallow frying

METHOD

Salt the anchovies generously and rest them for 10 minutes. Wash thoroughly to remove any impurities along with the salt. Sprinkle the spice powders and vinegar on the fish and marinate for 5-10 minutes. Season well. Simultaneously, bring the oil in a frying pan to heat.

METHOD

Spread out the semolina on a flat dish and coat each anchovy with the coarse mixture. Dust off the excess and set aside for a couple of minutes.

METHOD

Fry in the oil on a medium heat until the anchovies are golden-brown and crispy. Serve hot with a squeeze of lemon and sliced onions.
