Ghee rice, also known as Neychoru or Nei Choru, is a delicious and aromatic South Indian rice delicacy that originates from Kerala. This is an easy-to-make yet flavourful dish and is made with ghee, rice, subtle spices and herbs. It makes a perfect light meal that can be paired with sambar or chutney. Here’s how you can make ghee rice within 10 minutes.
1 cup of basmati rice 2 tablespoons of ghee 1 medium onion 2-3 green chillies 1 inch piece of ginger 2-3 cloves 3-4 garlic cloves 2-3 cardamom pods ¼ cup cashews 1 cinnamon stick 4-5 curry leaves 1 bay leaf 1 star anise ½ teaspoon red chilli powder Salt to taste Water as needed Garnish with fried onions and dry fruits.
Wash and soak the rice for at least 30 minutes. Drain the water and keep it aside.
Take a pressure cooker, heat it and add ghee. Add spices like cloves, cardamom pods, cinnamon sticks, bay leaf and star anise. Saute for a few seconds until fragrant.
Take another pan and dry roast the cashews, then set aside.
Add the sliced onions, green chillies, curry leaves and minced ginger. Saute until the onions turn transluscent and golden brown.
At this stage, add in the rice and mix it well with the ghee, spices, and salt to taste.
Pour in the water and give it a gentle stir. Cover the pressure cooker lid and cook the rice for at least 1 whistle. Turn off the heat and allow the rice to fluff up in steam.
Open the lid and allow the steam to escape. Add the fried onions, cashews and dry fruits. Serve hot.
