Get gelato in your kitchen! Gelato is known for its dense and intense flavours and is perfect for any time of year. Here is a simple, no-fuss recipe to get the real deal at home.
500 ml Whole milk 250 ml heavy cream 150 g sugar 2 tablespoons cornflour 1 teaspoon vanilla extract
In a small bowl, mix cornflour with a little milk to make a smooth slurry.
In a saucepan, combine whole milk and sugar. Heat on medium until the sugar is dissolved, stirring occasionally.
Add the cornflour slurry to the saucepan and stir until the mixture thickens slightly. About 3-5 minutes.
Add heavy cream and heat until warm. Do not boil.
Remove from heat and add vanilla extract. Let it cool, then pour it into an ice cream maker and churn according to the machine’s instructions.
Freeze for a few hours for a more solid texture.
