Galette des Rois, a traditional French recipe made in January for Epiphany celebrations, hides small figurines and fève or a dried bean, representing baby Jesus. Make this delectable cake at home and invite friends and family to celebrate the festive spirit.

1 1/4 cups (125g) almond flour 1/2 cup (100g) granulated sugar 1/2 cup (115g) unsalted butter, softened 2 large eggs 1 tablespoon rum or almond liqueur (optional) 1 teaspoon almond extract A pinch of salt 1 or 2 sheets of puff pastry (store-bought or homemade)

Blend sugar and butter until they turn creamy. Add almond flour, salt, 1 whole egg, and the white from another egg. Add optional rum and extract. Refrigerate the mixture for at least 1 hour.

Combine the yolk with a teaspoon of cold water. Refrigerate this mixture until needed.

Place one round of dough on a parchment-lined baking sheet. Spread the filling evenly, leaving a 1-inch border. Then add the filling.

Dampen the dough border with cold water. Cover with the second dough circle, sealing the edges firmly. Create a scalloped pattern around the border. Refrigerate for 30 minutes.

Preheat the oven to 425°F. Brush a thin layer of the yolk glaze over the galette's top, avoiding the edges. Create a design on the surface without piercing the dough. Make six small cuts for steam vents.

Reduce oven temperature to 400°F. Bake the galette for 30-40 minutes until it turns a deep golden colour. Check after 20 minutes and cover loosely with foil if it’s browning.

Once baked, transfer the galette to a cooling rack. Allow it to cool for at least 15 minutes. Then serve and enjoy.
