Coconut milk – which forms a creamy base for soups, curries, stews and even desserts, has a distinct flavour and quality when pressed freshly at home. Contrary to popular belief, following these simple steps can produce some of the best quality coconut milk you can have in reserve.
Once the coconuts are cracked open, use a knife to carefully separate the coconut meat from the shell.
Use a coconut grater or a food processor to shred the coconut meat finely.
Place the shredded coconut meat into a blender along with some warm water and grind the mixture on high speed for 2-3 minutes.
Place the mixture in a cheesecloth or mesh strainer over a large bowl and squeeze the mixture to extract as much liquid as possible.
Transfer the freshly made coconut milk into a clean glass jar and store it in the refrigerator for up to 4-5 days.
