Layered and abundantly textural – the lachha paratha is a type of flatbread that is typically paired with spicy Indian curries or stews. Crisp, flaky and soft enough to mop up gravies, recreate these delicious parathas at home.
Knead the dough using whole wheat flour, water and some salt.
Divide the dough into equal-sized balls and roll it out into a thin circle.
Brush a thin layer of oil and sprinkle flour evenly over the rolled-out dough circle.
Starting from one end, make pleats or folds like a fan or accordion.
Gently press the coiled dough with your palm to flatten it slightly and roll it out again into a thin circle.
Cook over a hot skillet for 2-3 minutes on each side, drizzling plenty of oil as you go to separate the layers.
