This year is for millets. Besides, if you love indulging in soup, then this recipe is the must for you. The goodness of Ragi chicken soup made with ragi, veggies and chicken chunks are perfect for your dinner tonight. Take a look at the recipe:

1 chicken breast ½ cup broccoli ¼ cup corn 2 tbsp ragi flour Chopped zucchini 1 tsp oregano 1 tsp red chilli flakes 1 tbsp garlic minced 1 tsp ginger paste Pepper and salt as needed 1 onion large chopped 2 handful spinach 1 handful coriander leaves 1 tbsp butter Water as needed 2-3 cups of vegetable stock

Wash and chop the veggies and herbs and keep them aside.

Take a pan, take water. Blanch the spinach leaves and broccoli. After this, run them through cold water. Keep them aside.

Take the chicken breasts and pressure cook till 1-2 whistles. Turn off the flame.

Take the chicken breasts and shred it. Meanwile take a small bowl and add ragi flour with some lukewarm water. Make a lump-free slurry.

Take a pan and add butter. After the butter melts, add onion, minced ginger and garlic and saute them. Add the rest of chicken, spinach, veggies, corn, and broccoli. Saute them till they are nicely cooked.

Pour the vegetable stock gradually and add the slurry. Keep cooking over medium flame. Season with salt, spices and herbs.

Once the soup attains a thick consistency, turn off the flame and transfer to the bowls.
