Paneer Butter Masala is a rich and creamy North Indian curry. It combines mildly spiced tomato-onion gravy with tender paneer cubes. This popular vegetarian dish is ideal for lunch or dinner, served with naan or rice.
2 tbsp oil 2 tbsp butter 5 cloves 2 cardamom pods 2 onions, sliced 2 garlic cloves 1-inch ginger 3 tomatoes, sliced 15 cashews 1 bay leaf 1 green chilli ½ tsp turmeric
1 tsp chilli powder ¾ tsp coriander powder ¼ tsp cumin powder ½ tsp garam masala 1 tsp salt 1 cup water 2 tbsp cream 16 paneer cubes 1 tsp kasuri methi 2 tbsp coriander, finely chopped
Heat oil and butter in a pan, then add cloves and cardamom until fragrant.
Add sliced onions, garlic, and ginger, and cook until the onions soften.
Add sliced tomatoes and cashews, and simmer for 10 minutes until soft.
Blend the mixture into a smooth paste and strain it to remove skins and seeds.
In a pan, heat oil, butter, bay leaf, and chilli. Add chopped onions and cook until golden.
Add the tomato-onion paste, spices, salt, and water. Cook until oil separates.
Stir in cream, paneer cubes, kasuri methi, and coriander. Simmer for 5 minutes, then serve.
