Dry yoghurt, also known as dehydrated yoghurt, is a concentrated yoghurt with intense flavour and creamy texture, perfect for toppings, cooking or snacking. This easy method turns regular yoghurt into a thick and dry version you can have at any time.
500 ml plain yoghurt ½ teaspoon salt Muslin cloth or cheesecloth
Place a large sieve or colander over a bowl and line it with a muslin cloth or cheesecloth. Make sure it’s stable and deep enough to hold all the yoghurt.
Pour in the yoghurt. For a bit of savoury flavour, add salt before pouring.
Gather the corners of the cloth and tie it up, then hang it over the bowl. Let the liquid (whey) drain for 6-8 hours or until you reach the desired thickness.
Put the strainer and bowl in the fridge if you want it even drier.
When it is dry and creamy, remove it from the cloth and store it in an airtight container.
