Make Dhaba-Style Lahsooni Palak With This Quick Recipe

Ingredients

– 4 cups fresh spinach leaves – 1 cup finely chopped onions – 1 cup ripe tomatoes – 2 tablespoons oil or ghee – 1 teaspoon cumin seeds – 1 tablespoon ginger, finely – 1 tablespoon garlic, minced – 1-2 green chilies, – 1/2 teaspoon turmeric – 1 teaspoon red chili powder – 1 teaspoon coriander – Salt to taste – 1/2 teaspoon garam masala – 1 tablespoon lemon juice – Fresh coriander leaves

Step 1

Bring a pot of water to boil. Submerge the spinach leaves in boiling water for about 2 minutes until they wilt. Transfer the spinach to a bowl of ice water to retain its green color. Drain the spinach and blend it into a smooth puree.

Step 2

In a pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Add finely chopped garlic and ginger. Sauté until the garlic turns golden brown.

Step 3

Add chopped onions to the pan and cook until they become translucent. Introduce chopped tomatoes and green chilies. Cook until the tomatoes are soft and the oil starts to separate.

Step 4

Stir in turmeric powder, red chili powder, and coriander powder. Sauté for an additional minute. Incorporate Spinach Puree: Pour in the blended spinach puree. Mix well with the onion-tomato-spice mixture.

Step 5

Add salt and garam masala. Adjust the seasoning according to your taste. Let the Lahsooni Palak simmer for 8-10 minutes, allowing the flavors to meld.
