1-2 cardamom pods 1 cinnamon stick 1/2 cup mixed vegetables (carrots, peas, beans, etc.) 1/2 tsp turmeric powder 1 tsp garam masala 2 cups water Salt
Soak Basmati rice in water for about 20 minutes, then drain. In a pan, heat ghee or oil. Add cumin seeds, cloves, bay leaf, cardamom pods, and cinnamon stick.
Add the sliced onions and sauté until golden brown. Add the mixed vegetables and cook for 2-3 minutes.Stir in the turmeric powder, garam masala, and salt.
Add the drained rice to the pan and gently stir to coat the rice with the spices and vegetables. Pour in 2 cups of water.
Bring the water to a boil, then reduce the heat to low. Cover the pan and let the rice cook for about 15-20 minutes.
Turn off the heat and let the pulao sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with fresh coriander leaves.
