In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, coriander powder, turmeric powder, garam masala, cumin powder, chaat masala, kasuri methi, salt, lemon juice, and vegetable oil. Mix the ingredients well to form a smooth and thick marinade.

Add the paneer cubes to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 2 hours or preferably overnight. This allows the paneer to absorb the flavours.

If you're using a grill, preheat it to medium-high heat. For an oven, preheat it to around 200°C or 400°F. Thread the marinated paneer cubes onto skewers. If using wooden skewers, soak them in water for about 30 minutes.

Brush the grill grates or a baking tray with oil to prevent sticking. Place the skewers on the grill or in the oven and cook for 15-20 minutes. Turn the skewers occasionally for even cooking.

Once cooked, remove the paneer skewers from the grill or oven. Garnish with fresh coriander leaves and serve hot with lemon wedges.
