Red chutney, a spicy, tangy condiment made from dried red chillies, onions, garlic, tomatoes, and tamarind, is usually served with dosa or idli. Blended into a smooth paste, it's flavoured with coconut for richness.
3 tbsp oil 2-3 dried red chillies 1 onion 4-5 garlic cloves 2 tbsp grated coconut 1 tomato 1 tbsp tamarind pulp 1 tsp mustard seeds 1 sprig curry leaves Salt
Heat 2 tablespoons of oil in a pan. Add the dried red chilies, and sauté for a minute. Then add chopped onions and garlic cloves.
Let the onions turn soft and translucent. Add the chopped tomato and cook until they soften.
Next, add the grated coconut and cook for another 2-3 minutes.
Add the tamarind pulp, stir and let this mixture cool slightly.
Transfer the mixture to a blender, add a little water, and blend it into a smooth paste. Add salt to taste and blend again.
Heat a teaspoon of oil in a small pan, add mustard seeds and let them splutter. Add curry leaves and pour this tempering over the chutney.
