Makhana Kheer is a rich Indian dessert made from makhana (fox nuts), milk, and sugar, flavoured with cardamom and garnished with nuts. It is delicious and perfect for festivals and special occasions.
1 cup makhana 1 litre milk 1/4 cup sugar 1/4 tsp cardamom powder 2 tbsp ghee 10-12 cashews 10-12 almonds 8-10 raisins A pinch of Saffron strands
Heat 1 tablespoon of ghee in a pan. Add the makhana and roast until they become crispy, Set aside and allow them to cool slightly. Coarsely crush half of the makhana and keep the rest whole.
In the same pan, add the remaining ghee and lightly roast the cashews, almonds, and raisins until golden brown. Set aside.
In a heavy-bottomed pot, bring the milk to a boil. Reduce the heat to low and let the milk simmer until it thickens slightly, stirring occasionally.
Add the crushed and whole makhana to the simmering milk. Let it cook for about 10-12 minutes.
Stir in the sugar and continue to cook until the sugar dissolves. Add the cardamom powder and saffron strands.
Mix in the roasted nuts and raisins. Cook for a few more minutes until the kheer reaches your desired consistency.
