Also known as “hung curd,” Greek yoghurt typically has a thicker texture and a richer taste than regular yoghurt. It’s also considered healthier than regular yoghurt because it has more protein content. Here's a recipe to transform regular dahi or curd into Greek yoghurt in simple steps.
500 ml dahi (curd) muslin cloth colander
Arrange a decently-sized container or a colander over a large bowl. Then, place a muslin cloth over the container.
Using a spoon, spread the dahi proportionately over the muslin cloth. Subsequently, tie the free edges of the cloth into a tight knot.
Set aside the concoction to settle for approximately 5–6 hours. Your homemade Greek yoghurt will be ready once the mixture has lost all excess water.
Once ready, refrigerate the Greek yoghurt to ensure that it doesn’t become stale or sour. Enjoy!
