Chicken soup can be a comforting and nourishing dish that brings warmth and healing. With tender chicken, flavourful broth, and wholesome vegetables, it’s the perfect remedy for cold days or when you're feeling under the weather. Simple yet satisfying, it's a timeless classic in every kitchen.
500 gms chicken 1 onion, chopped 2 carrots 2 celery stalks 4 cloves garlic 6 cups chicken broth 1 bay leaf 1 tsp thyme Salt Pepper 1 tbsp olive oil or butter Fresh parsley
In a large pot, heat olive oil or butter. Add chopped onions, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
Add the chicken, chicken broth, bay leaf, and thyme. Season with salt and pepper. Bring to a boil, then reduce the heat and let it simmer for 20-30 minutes.
Once the chicken is fully cooked, remove it from the pot. Shred or chop it into bite-sized pieces, then return it to the soup.
Let the soup simmer for another 10 minutes, adjust the seasoning, and garnish with fresh parsley before serving.
