Make Comforting Bengali Khichdi In Just 6 Simple Steps

Khuchuri or khichdi in Bengali style is the recipe for an ultimate comfort meal. It is perfect for summer and monsoon. Neither does it require too much effort nor does it call for spending a lot of time in the kitchen. Here is an easy-to-follow recipe that you should check out.

Ingredients

3 tbsp ghee 1 cup basmati rice ½ tsp turmeric and chilli powder 3 cloves, cardamom 1 bay leaf 1 cup moong dal 1 inch ginger and cinnamon 1 tsp cumin seeds Salt to taste 2 small tomatoes and potatoes 1 chopped green chilli ½ tsp sugar A pinch of asafoetida ½ cup cauliflower, green peas, carrots

Step 1

Rinse rice thoroughly and soak them for at least 20-30 minutes. Meanwhile, roast dal in a pan until it is evenly brown.

Step 2

Let the lentils cool off and rinse it with water. In a pressure cooker, add oil and whole spices like cardamom, bay leaf, cloves, and cinnamon. 

Step 3

Sprinkle cumin seeds and once they start spluttering, add ginger, turmeric, chopped green chillies, and hing.

Step 4

After sauteing for a couple of minutes, add tomatoes and wait for them to turn soft. Fold in vegetables and partially cook them.

Step 5

Pour in rice and dal along with water and sprinkle salt to taste. Wait for 4-5 whistles.

Step 6

Top the Bengali khichdi with a dollop of ghee and serve it hot with curd, pickle, and papad.
