Add four cups of hot water to a cup of freshly grated coconut and rest for 10 minutes.
Blend using a mixer jar until creamy and combined thoroughly.
Pour over a fine mesh strainer placed over a bowl to strain the coarse bits.
Press down with a spoon or squeeze the cheesecloth to extract as much liquid as possible.
Blend the coconut mixture a second time with another 1-2 cups of hot water, and strain again to extract more milk.
Transfer the strained coconut milk into a clean container with a lid and store in the refrigerator for up to 4-5 days.
