Gazpacho is a chilled Spanish-origin tomato-based soup that’s a summertime favourite. The soup is infused with cooling properties that enable one to stay light and hydrated on sweltering summer days. Here’s a simple gazpacho recipe to help you beat the summer heat.
3 cups tomatoes, chopped 1 peeled cucumber 1 green bell pepper ½ peeled red onion 1–2 peeled garlic cloves ½ tablespoon cumin ½ tablespoon black pepper 2 tablespoons of sherry vinegar 3 tablespoons of olive oil 1 tablespoon salt
Assemble all the ingredients in a blender or a food processor, and blend them together for about 60 seconds or till the concoction assumes a thick, soupy texture.
Taste the soup to check it is infused in the correct quantities with the flavours of the ingredients; add extra seasonings, such as salt, pepper, cumin, etc., if necessary.
After appropriate seasonings have been added, transfer the soup to an airtight container and refrigerate it for about 3–4 hours, or until it has chilled entirely.
Your refreshing, chilled gazpacho is ready! Transfer the soup to a serving bowl and add desired garnishes, such as croutons and herbs, to elevate the dish.
