If you love thukpa, give it some more flavour with cheese and masala! Thukpa mainly uses broth and if you want it to be spicier, you can easily add in some masala. The cheese can give it a thicker consistency and some added creaminess. Let's explore this recipe.

– 2 onions, roughly chopped – 2 tomatoes, – 3-4 cloves of garlic – 1-inch piece of ginger – 2 green chilies – 1/2 teaspoon turmeric – 1/2 teaspoon garam masala – Salt to taste – 2 tablespoons oil – 200 grams noodles – 2 cups bell peppers, cabbage, mushrooms – 4 cups vegetable broth – 1/2 cup grated cheese

In a blender, combine onions, tomatoes, garlic, ginger, green chilies, cumin seeds, coriander seeds, turmeric powder, garam masala, and salt. Blend until you get a smooth paste.

Heat oil in a large pot or deep skillet over medium heat. Add the masala paste and sauté for 8-10 minutes until it thickens. Cook the noodles according to the package instructions. Drain and set aside.

Once the masala paste is cooked, add the mixed vegetables to the pot and sauté for another 3-4 minutes. Pour in the vegetable or chicken broth and bring the mixture to a simmer. Let it cook for 8-10 minutes.

Add the cooked noodles to the pot and stir to combine. Let it simmer for another 2-3 minutes. Turn off the heat and sprinkle grated cheese over the thukpa. Cover the pot and let it sit for a couple of minutes.

Give the thukpa a final stir, taste and adjust the seasoning if needed. Serve the thukpa hot, garnished with fresh cilantro leaves and lime wedges.
