A deliciously creamy alternative to peanut butter, homemade cashew butter is a great option to use in sweet as well as savoury applications. Make sure to prepare this in small batches and use up within a couple of weeks, for maximum flavour and freshness.
1 cup cashews 2 teaspoons coconut oil 2 tablespoons honey (optional)
Add the cashews to a dry pan and toast until golden-brown and aromatic.
Cool for 10-15 minutes before adding it to a food processor and grinding coarsely at first.
Add the coconut oil and grind further until you get a creamy, smooth consistency.
If using honey, add it just before the butter reaches an ideal consistency and blitz once more to mix thoroughly.
Transfer to an air-tight jar and refrigerate for up to 2 weeks.
