Bhapa Doi is a Bengali delicacy that involves steaming yoghurt blended with condensed milk for a rich, and creamy dessert. It is easy to make and comes together in a matter of minutes, here's how.
550g homemade yoghurt, 400ml condensed milk, 1 tbsp powdered sugar, 2 tbsp chopped pistachios
In a clean muslin cloth, pour in the full-fat plain yoghurt and hang it over a bowl to eliminate the whey.
Add the hung yoghurt to a bowl followed by condensed milk and powdered sugar and whisk them till everything is incorporated. Adjust the level of sweetness to your preference.
Preheat the oven to 180 degrees Celsius. Pour the mixture into oven-proof ramekins and cover them in aluminum foil.
In a deep baking tray place the ramekins and pour hot water up to ⅔ of the length of the ramekins.
Carefully place the tray in the middle rack of the oven and bake at 160 degrees Celsius for 20 minutes.
Take the ramekins out of the hot bath and let them come up to room temperature, before storing them in the refrigerator. Remove the aluminium foil, garnish with chopped pistachios on top and serve.
