Mishti Doi is a traditional Bengali dessert made from sweetened yoghurt, known for its creamy texture and rich flavour. Often prepared with jaggery or sugar, it is served chilled, making it a perfect end to a hearty meal, especially during festivals and celebrations.
1 litre full-fat milk 3/4 cup sugar 2-3 tablespoons yoghurt
Heat the milk in a thick-bottomed pan and bring it to a boil. Lower the heat and simmer until it reduces slightly, stirring occasionally to prevent it from sticking to the bottom.
In another pan, heat the sugar over low flame until it melts and turns a golden caramel color. Stir constantly to avoid burning.
Slowly add the caramelised sugar to the hot milk, stirring continuously. Ensure the sugar dissolves completely and the milk acquires a light brown hue. Let this mixture cool to lukewarm.
Once the milk has cooled to lukewarm (warm but not hot to touch), add the yogurt. Whisk thoroughly to ensure there are no lumps.
Pour the mixture into individual clay pots or a large container. Cover and let it ferment in a warm place for 6-8 hours or until it sets firmly.
Once set, refrigerate for a few hours. Serve chilled as a dessert or a sweet treat.
