Gur-er Narkel Naru is a traditional Bengali sweet made with grated coconut and jaggery. This simple yet delicious treat is popular during festivals and is easy to make with just a few ingredients.
2 cups fresh grated coconut 1 cup organic jaggery (powdered or grated) ½ tsp green cardamom powder (optional) 1-2 tsp ghee or coconut oil (for greasing palms)
Heat a heavy pan on low heat and add the freshly grated coconut.
Stir and roast the coconut for 4-5 minutes, avoiding browning.
Add jaggery to the roasted coconut and mix well. Cook the mixture, stirring continuously, for 6-7 minutes until slightly thickened.
Check if the mixture can form a small ball when cooled slightly.
Remove from heat, add cardamom powder, and let the mixture cool.
Grease palms with ghee, and shape the mixture into small round balls.
