Looking for a homemade pro-biotic drink that can help you with your gut health? A beetroot kanji is a great idea! It's easy, quick and can be made with very simple ingredients. Let's have a look at the recipe

2 medium-sized beetroots, peeled and grated 2-3 black carrots, grated 2 tablespoons mustard seeds 1 tablespoon mustard powder 1 tablespoon red chili powder 1 tablespoon salt Water, as needed Glass or ceramic jar for fermenting

Peel and grate the beetroots and black carrots. Ensure they are cleaned thoroughly. Soak the mustard seeds in water for at least 2-3 hours or overnight.

After soaking, grind the mustard seeds into a smooth paste using a little water. Combine the grated beetroots and black carrots in a bowl and add the mustard paste, mustard powder, red chili powder, and salt

Mix everything well until the vegetables are coated with the spices. Transfer the mixture to a clean, sterilized glass or ceramic jar.

Add enough water to the jar to cover the vegetables and spices. Ensure there is at least an inch of space at the top. Tightly close the jar with a lid. Shake it well and place the jar in a cool, dark place for fermentation.

The fermentation usually takes around 3-4 days. Open the jar every day to release the gas produced during fermentation. Taste the kanji after 3 days, and check for a tangy flavour.

Once the kanji is fermented strain it to remove the vegetables and spices. Transfer the liquid to a clean bottle and refrigerate for at least 2-3 hours.
